My Sunday Photo – Ribs

It’s cold outside! It’s also raining and Hannah has managed to pick up yet another cold. We aren’t venturing out of the house, so there’s only one thing to do – cook something delicious! This week’s My Sunday Photo is part photography, part World’s Worst Food Blog! It’s all about ribs.

Cold weather is the perfect excuse to put a large chunk of meat in the oven and cook it for hours on end. This weekend, I decided to try ribs. I have only ever cooked ribs once before and the result wasn’t great. They came out very dry and hard. After a bit of research, it turns out my mistake was to marinate them, then stick them in the oven.

For tender, juicy ribs that fall off the bone, a dry rub is the key. The home-made barbeque sauce is only brushed on at the end, to create that mouth-watering sticky glaze. I followed Curtis Stone’s excellent recipe and the results were outstanding! The only thing I didn’t have was the smoky flavour, because I cooked them in the oven and not the barbeque. I didn’t feel like I was missing out.

As if the ribs weren’t enough, I partnered them with home-made oven-baked chips, coleslaw and sauerkraut. A big bowl of the home-made barbeque sauce on the side for dipping completed the dish. It’s fair to say I was one satisfied man after dinner last night! Best of all, there’s left overs, so I’ll be right back into it again today!
